On Wednesday, Disney released a recipe via it’s apps. It has blown up on the internet in the last few days. Every where you look it’s DIY dole whip, kuddos to Disney for good marketing amidst the covid crisis … Now don’t get me wrong, I love dole whips. I have had them at the park and yes they could be the sole reason I go back. But considering I am in Canada and basically on lockdown,with non essentials being blocked at boarder- it seriously puts a damper on the pineapple right now. However I do have a wonderful smoothie book called One and Only Smoothies, Shakes and Juices: by Wendy Sweetser.

I really like this book because of the unusual combinations. Not just standard run of the mill berry or citrus, but things like beets, pumpkin or even earl grey tea. At first I was skeptical, dates and earl grey? pumpkin and carrot? But there is a good reason this book was published. Now – this book does contain alot of yogurt and milk but with a few simple tweaks I am able to easily veganize. Well worth $6 price on amazon. Here are my 3 personal favs I have used several times from the book. Red jewel smoothie, Choco Latte (orig name is Heaven in a glass- yup it deserves it), and a Pumpkin Pineapple smoothie for those lucky enough to still access to fresh pineapple … So lets get those fancy glasses, little umbrellas, and youtube Caribbean music. Pretend we are all at the Tiki room in Orlando. Let’s pretend for the moment, that covid is a thing of the past…. With all the new rules and regulations every day, as Cinderella says “They can’t order me to stop me dreaming…” Cheers!
Red Jewel- yeilds 3.5 cups
perfect pick me up- beets have lots of vitamins and minerals to fight fatigue. The fruit masks the earthy flavor but color will still pass through you so don’t be alarmed when you go to the loo…
- 4 oz cooked beets peeled and chunked
- 1 pear peeled and cored
- 1 orange peeled
- 1/2 cup apple or raspberry juice
- 1/2 cup cranberry juice
- 1/2 cup soy milk (orig recipe called for buttermilk)
Place fruit and veg through a juicer or high power blender until smooth- Then mix together with other liquids. serve over ice. enjoy
Choco Latte smoothie
Are you choco milk shake fan.. how about iced cap? then this is for you…
- 1 large banana
- 2 tb almond or peanut butter
- 2 tbs cocoa powder
- 1 1/4 cup dairy free milk
- 1/2 cup ice
- **i like to add 2 tsp chicory root based “coffee” granules (like Caf Lib)
Blend everything in high power blender until smooth – enjoy.
reminiscence of Wizarding worlds – Harry Potter pumpkin juice, without all that extra added sugar.
- 6 oz Pumpkin or squash cooked
- 1 banana
- 1 ring of pineapple – fresh prefered
- 1/2 cup pineapple juice
- 1 1/4 c orange juice
blend everything together until smooth and serve over ice Enjoy
