Have you ever just wanted to sit down eat a bowl of cookie dough and cry… No, no one – just me. Ok maybe that was too much information. This Covid isolation is really messing with my brain. I am constantly forgetting what day of the week it is. I literally have to input everything into my calendar and set reminders. I took to leaving our milk cooler on the porch so we didn’t miss the milk man. Yesterday, I had this nagging feeling that I kept forgetting to do some thing, I got so frustrated I told my husband. He laughed and said yeah “You’re forgetting to live life”, he was referring to the Covid isolation.

Now I know chocolate cravings are your body’s way of saying you need magnesium – the stress reducing mineral. Magnesium reduces cortisol levels, helps manages depression and anger etc. Magnesium is great and totally works, we have used it for years. But sometimes you just want throw healthy out the window and eat junk. So we are back to the cookie dough.
I found this particular dough on a site called From My bowl. I have been using it as my go to raw dough. Don’t worry its not like those bob red mill’s doughs – which are great baked but taste terrible raw…. they are like eating chalk raw. Sooooo bad. This has a base of cooked chick peas – you can eat it with a spoon no worries of getting sick or wreaking havack on diets. The high protein will prevent the dreaded sugar crashes. The fact that the chick peas are cooked and not flour removes that dreaded “bean” taste that cookies should not have. If you cook them yourself from dry, they have even less bean flavour.
This is a healthy raw vegan cookie dough! Why? Some people may ask, would you want a raw cookie dough? Besides the obvious – why not! You can add it to many things including vegan ice creams, smoothies use as a base for truffles, a filling for cannolis or frozen fudge pops or just have it the way it is for movie fest treat – Star Wars anyone? I have even heard of some people dehydrating it, and eating it like brittle. I personally have never done that – and it probably would last that long in my home. Let’s be honest.
Vegan Raw cookie dough- Found on: From My Bowl
1 ½ cups cooked Chickpeas
¼ cup Nut or Seed Butter – I like peanut but also recommends cashew
1 tsp Vanilla Extract
3 tbsp Oat Flour or ¼ cup Almond Flour
2 tbsp Maple Syrup plus more to taste
¼ cup Dairy-Free Chocolate Chips- I like mini sized. Or chunks
½ tsp Salt
Add all ingredients, except for the Chocolate Chips, to a high-speed Blender or Food Processor. Process until a thick, even dough forms, scraping the sides of your device as necessary. Keep in mind that the dough will thicken even more after the flour absorbs some of the liquid and after it sits in the fridge.
Taste the dough and add more maple, if desired. Transfer the dough into a large bowl and use a Spatula to fold in the Chocolate Chips Serve and enjoy! Leftovers will keep in the fridge for up to one week.
