
I have a confession, I have eaten pie for breakfast once or twice. Ok- a lot more then once or twice. I rise early before the rest of the house and have just sliced myself a piece of pumpkin, apple or berry and pop it cold right into my mouth. Yup, I am a pie pilfer. Can you pilfer a pie you already own… well yes, if your husband goes to cut a slice later that day and notices a chunk already missing. There are 3 obvious ways to resolve this issue:
- Stop eating pie…LOL…
- get rid of those who notice – yeah cannot do that
- Make More pies – hum that could work …but I am told by “some people” that this is “not healthy”
Therefore confess your sins to each other and pray for each other so that you may be healed.

So how can we treat ourselves to luxury without sneaking into the fridge with the pie lifter? Well, technically that part is up to you …but we can switch it up a bit and make it healthy!
Enter Apple Pie bake oatmeal. It is The perfect compromise – serve it warm for dessert with fresh coconut whipped cream like an apple crisp or snitch it cold from fridge with a cup of coffee. With Flax, oats, fresh fruit- it’s healthier then crisp or pie but still with all the luxury. I have even removed the sugars and made it during our Daniel fast -not quiet as sweet but still entirely delicious. This recipe also works well with other fruit too- Berries, rhubarb and more!
Hooray – no more pie pilfering
Apple pie baked Oatmeal
- 2 cups old-fashioned rolled oats (not instant)
- 1/3 cup brown sugar (or to taste)
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 2 flax eggs (or 4 tb of fruit purée )
- 2 cups non dairy milk
- 1 teaspoon vanilla extract
- 4 tablespoons non dairy butter,
- 2 -3 tart baking apples, Granny Smith is best
- Preheat the oven to 325°F. Grease an 8 or 9-inch baking dish with butter.
- In a medium bowl, combine the oats, baking powder brown sugar, any extra add ins – raisins, nuts etc, cinnamon and salt. Mix well.
- In another bowl, whisk in the non dairy milk , aqua faba or purée, vanilla until well combined.
- Add the milk mixture to the oat mixture, along with the melted butter.
- Scatter the apples evenly on the bottom of the prepared baking dish. Pour the oatmeal mixture over top and spread evenly. Bake for 40-45 minutes, until the top is golden and the oats are set. Serve warm or at room temperature.
** Flax egg : to make one flax egg combine 1 tb of ground flax with 2.5 tb of water and let sit for 5 min.
** Add ins : 1/2 cup each nuts, raisins , or dried cranberry
** non dairy butter can be replaced with coconut oil
** sugar can be omitted but it will not be as sweet.
