Summer is fast approaching and if your like our family that means grilling season. My husband has blessed me with his support of my plant based lifestyle change thus far. I sit and think about this, it wasn’t too long ago that I refused to support his fast. I was too stubborn and full of pride. ” I am not going to make 2 separate dinners…” I guess you know know why I chose a donkey as the theme of this website.
How much can things change when your willing to just walk with God, or should I say God gives you a shove off that high horse. Either way my husband still cringed at the thought of no burgers on the regular anymore. The struggle is real. We stumbled upon a book at our local library called VEGANIZE IT by Robin Robertson. (click link for book order info) After my experience with lack luster vegan cookbooks this particular cookbook was outstanding. It is filled with amazing recipes that people like my husband and kids actually want to eat. Complete plant based food and seriously- NO RABBIT FOOD!
My husband sat down with the book and decided to try the burgers. We made a quick list of items and sat in the Saturday grocery line. Do not go shopping on Saturday people, not worth losing 2 hours of your day. You would think after 20 plus years of grocery shopping I would learn this lesson.
The assemble was a bit messy and works best if you have food processor, which my husband graciously blessed me with shortly after this experiment ( Thank you honey). These burgers will get you appliances people!! The recipe states makes 6 burgers but we found that excessive- they will be thick and huge. my husband could hardly finish his. Remember beans are a very filling protein- I found you can easily make 8 to 10 thinner burgers or portion them smaller for cute sliders for lunches.
Bean Burgers – Original recipe by Robin Robertson
- 3/4 c chopped walnuts
- 3/4 c rolled oats
- 1/2 c bread crumbs
- 1 can black beans drained & rinsed
- 1/2 c minced onion
- 2 Tbs wheat gluten ( avail at bulk stores)
- 1 tbs ground flax mixed with 3 Tb warm water
- 1 Tb soy
- 1/2 tsp vegan bouillon (like Better then Bouillon)
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp pepper
- optional: 1/2 seeded jalapeno
In food processor combine crumbs, oats, and nuts until finely ground. Add beans, onion, pepper ( if using), and remaining ingredients. Pulse to mix well. Portion into 8-10 for larger burgers. You want them 1/4- 1/2 inch thick. Shape into patties and set aside in fridge for minimum of 30 minutes.
Preheat and Oil pan or grill on medium low. Cook for 5 minutes on each side careful not to burn. Serve of fresh buns with grilled vegetables and lots of fresh salad.
You can freeze these but make sure to thaw before cooking.
