As a child I always wanted to be a princess. Who knew in 2021 we would wake up and realize we’re living the Disney dream…. literally.
So – if we take covid as plot development – we are well on our way to a good old fashion happy ending …but in all seriousness, during this time when so much persecution abounds we must remain steadfast in our faith, just as the apostles did.
My fellow believers, when it seems as though you are facing nothing but difficulties see it as an invaluable opportunity to experience the greatest joy that you can! And then as your endurance grows even stronger it will release perfection into every part of your being until there is nothing missing and nothing lacking. – James 1:2-4
This No sugar fruit crumble is perfect for those starting the Daniel fast on Monday, or just not wanting that extra sugar in their diet.
No Sugar – Fruit Crumble
- 2 cups of whole oats
- 1/2 tsp baking powder
- 1/2 cup of flour
- 1 cup of finely chopped walnuts
- 1 teasppon of cinnamon
- 1 tablespoon of vanilla extract**
- 2 tablespoons of solid coconut oil -melted
- Optional : 3 tb of date purée for added sweetness
- Filling **
- 3 cups of fresh diced strawberries
- 3 cups peaches diced
- Zest and juice from one lime
- 2-3 tbs of cornstarch
** Daniel Fast Note: omit extract and sub in paste of 1 vanilla bean. Also you can use 6 cups of any fruit in this mix and match -rhubarb and strawberry or all one like apple… feel free to play around.
Toss fruit, lime and zest in cornstarch and layer into baking dish
In separate bowl mix crumble ingredients – except water…after mixing begin to add water a tbs at a time until large crumbles form. layer over fruit in baking dish.
Bake at 375 F for 35 min or until crumble is baked golden and fruit is bubbly. Allow to cool before serving.
