What to eat for breakfast? That is the question I am hearing these days. My family normally would eat hot breakfast of eggs & toast. Or cold cereal with milk. After cutting out animal products my husband struggles to find suitable breakfasts that fills him.
I knew eating breakfast without animal products or refined sugars could be challenging but delicious and satisfying…so the hunt was on.
Eastern cultures have eaten vegan breakfasts for centuries – I looked to Thailand for inspiration. Coconut rice is a slightly sweet sticky rice that is made with rich full fat coconut milk, and infused with lime zest. It has served as an inexpensive treat for many school children for years.
I had to test it out though, I did not have sticky rice avail for me so I simplified and used regular white rice. The many recipes I found said to sub half the amount of water with coconut milk. It cooked up beautifully. I topped it with mangos and other fresh fruit.
My son gobbled it all up with out question. Success!
Coconut breakfast rice with mixed fruit
- 1 1/2 cups uncooked minute rice
- 3/4 can coconut milk
- 3/4 cup water
- 1/2 tsp salt
- Lime zest
- 1 mango
- 1 kiwi
- 1 Orange
Bring to Boil water, zest, and coconut milk and add rice. Cover with lid and Turn off heat and let stand stand for 5 min. Let cool.
Peel and chop fruit into small dice and top rice. This is great both cold and warm.
